Beef steak with seasonal vegetables

Method

  1. Wash the potatoes and cut into wedges. Coat with smoked paprika, herbes de Provence, and olive oil. Place on parchment paper and bake in the oven for 20 minutes at 180°C (356°F) or in a hot frying pan.
  2. Slice the tomatoes in half crosswise and place in an ovenproof dish. Drizzle with olive oil, season with salt, pepper and sugar, then top with thin slices of garlic and fresh thyme leaves. Bake at 200°C (392°F) for 30 minutes.
  3. Cut the beef into four steaks and season with oil.
  4. Place the steaks in a very hot frying pan and sear for 3-4 minutes, until they release easily.
  5. Flip the steaks and continue to cook for another 3-4 minutes.
  6. Leave the meat to rest for 2 minutes, then serve immediately with the vegetables.

  • 2 tbsp vegetable oil

  • 600 g (1.3 lbs) potatoes
  • 1 tbsp herbes de Provence
  • 1 tbsp. smoked paprika
  • 1 tbsp finely chopped garlic
  • Olive oil
  • 4 vine tomatoes
  • 5 garlic cloves
  • 3-4 sprigs of thyme
