A new take on clafoutis, made in an oven-safe frying pan!
Method
- Preheat the oven to 190°C (375°F)
- Wash the lime, grate the peel, and squeeze the juice
- Peel then cut the bananas into 1 cm slices
- Sprinkle with lime juice and 2 tablespoons of brown sugar
- Let marinate while preparing the batter
- In a bowl, mix the flour, salt, 3/4 of the lime zest, and 60 g (1/3 cup) of brown sugar
- Mix with a whisk, gradually add the coconut milk, then add the eggs (use a hand blender if the batter gets lumpy)
- Spread the banana slices in a buttered frying pan in a single layer
- Cover with the coconut cream, sprinkle with lime zest, and bake for 15 minutes
- Let cool
- Sprinkle the clafoutis with brown sugar and caramelize with a kitchen blowtorch or grill in the oven for 3 minutes
- Serve warm or chilled with a scoop of coconut ice cream

- 25 cl (1 cup) coconut milk
- 3 eggs
