Pan-fried banana clafoutis

A new take on clafoutis, made in an oven-safe frying pan!

Method

  1. Preheat the oven to 190°C (375°F)
  2. Wash the lime, grate the peel, and squeeze the juice
  3. Peel then cut the bananas into 1 cm slices
  4. Sprinkle with lime juice and 2 tablespoons of brown sugar
  5. Let marinate while preparing the batter
  6. In a bowl, mix the flour, salt, 3/4 of the lime zest, and 60 g (1/3 cup) of brown sugar
  7. Mix with a whisk, gradually add the coconut milk, then add the eggs (use a hand blender if the batter gets lumpy)
  8. Spread the banana slices in a buttered frying pan in a single layer
  9. Cover with the coconut cream, sprinkle with lime zest, and bake for 15 minutes
  10. Let cool
  11. Sprinkle the clafoutis with brown sugar and caramelize with a kitchen blowtorch or grill in the oven for 3 minutes
  12. Serve warm or chilled with a scoop of coconut ice cream

  • 80 g (2/3 cup) flour
  • 25 cl (1 cup) coconut milk
  • 3 eggs
  • Butter
  • 1 pinch of salt
