Roasted carrots with maple syrup

Method

  1. Peel the carrots. Cut them in quarters lengthwise.
  2. Heat a pat of butter in a stainless steel frying pan, then add the maple syrup, salt, pepper, olive oil, carrots, and a splash of water. Cover and cook for around 8 minutes.
  3. Bake without a lid in the oven at 180°C (360°F) for 10 to 15 minutes, verifying that the carrots are cooked all the way through. The water will evaporate and the maple syrup will caramelize the carrots.
  4. Serve as an appetizer or with a roast and some rice or potatoes.

  • 2 tbsp olive oil
  • 1 tbsp cumin seeds
  • Salt, pepper
