Method
- Peel and chop the onion
- In a frying pan, sweat the onion in some olive oil, then add the sugar, salt, pepper, and Espelette pepper, caramelize lightly, and deglaze with vinegar
- Carefully clean, dry, and slice the mushrooms, then fry them in a pan with some olive oil
- Arrange some onions, mushrooms, and cheese on a slice of bread, cover with another slice, and tie up the sandwich
- Cook in a frying pan until both sides of the Croque Monsieur are golden brown.
Ingredients
- 150 g (5.3 oz) mushrooms
- 1 white onion
- 75 g (2.6 oz) grated Gouda cheese (without animal rennet)
- Olive oil
- 2 tbsp balsamic vinegar
- 10 g (1 tbsp) sugar
- 1 pinch of Espelette pepper
- Pepper and fleur de sel
- 4 slices of sandwich bread (for 2 Croque Monsieurs)
